Have you had pico de gallo or ceviche? I’m don’t like plain raw cucumbers but i’ll throw some lime and salt on them and eat them that way
My personal reason for attempting to eat healthier (enjoy that chipotle every once in a while) and the reason i encourage others to do the same, is that a poor diet has worse outcomes on health.
For one i want all my loved ones and comrades to be healthy and feel good in their bodies. But honestly the bigger scarier part is that no one cares if you are in poor health. The US govt could not care less that you are in poor health as long as it isn’t cutting into your ability to work. The medical field will profit off of your poor health, insurance execs will get their bonus, your employer will give you a little bit of sick time if you are dealing with health issues and will cut you lose if they exceed your pto.
Food inequality is not an individuals choice nor is living in a food desert but please if you have the option take care of yourselves comrades. This whole thing has me thinking we post healthy budget meals on here.

I’m an avid bean eater, sometimes i have them as a part of every single meal of the day. I recommend building your week around a certain bean you plan on making for the week.
For example i’ll make a big pot of beans, for black and pinto I do: half an onion diced, which I fry for just a little bit then i my spices which are usually smoke paprika, pepper, salt, cumin and bay leaves. sauté that for about a minute then add your beans and water with enough water to cover the beans to your second knuckle. I add 2-3 whole cloves of garlic and I cut my other half of the onion in half(so quartered) and add that as well. I bring this to the boil and then simmer for a couple of hours, just keep tasting and stop them when they have the texture you like, beans tend to not change in texture to much after you turn the heat off so no need to pull them out sooner.
Now that you have your beans for the week you just have to find recipes to add the beans to. It’s not a bad idea to look at the chipotle menu for ideas of how you can switch up serving the beans. Let me know if you want any more specifics or ideas for things to do with other beans. I love red beans and rice for example, and beans and rice is a great combo for any meal.
If the tomatoes are going to be turned into a sauce and i’m out of season then yeah whole canned tomatoes all the way, other than that fresh tomatoes even out of season for anything using fresh tomatoes or
diced tomatoes. As far as canned whole tomatoes i feel like they’re really isn’t much of a difference between canned whole tomatoes, everything from the yellow can san marzano to great value walmart whole tomatoes are very good. Only time i ever use canned tomatoes is the fire roasted for my chili but that’s it tbh
