Probably me not understanding how it works, but most lemmy.ml communities I subscribed to have this “subscribe pending” but I can still interact with them, just like you did with this thread. So I guess it’s just a display issue and we are actually subscribed to those communities?
That’s how I understand it works too. Since people don’t get how the fedeverse works, they’re dog piling the biggest communities and as a result they’re (the instance) having trouble. The request is probably lost in the void processing but if you can see the content you’re effectively subscribed

It’s “federation lag”, if you insist, or try another time it will subscribe for good eventually
