The problem is that you make the assumption that the farmers are the ones making bank, I don’t know in your country but in mine they definitely are not.
If the prices go down it will mean they will just stop producing, not farming for cheaper

-control pests and weeds, allowing us to use less pesticides and herbicides
-optimallty, a little bit more meat nd dairy profits

They don’t understand that they are animals too, ones that evolved as omnivores. They strive to be like the Panda and they exhibit similar intelligence and get about as much done.
