My absolutely favorite cold beetroot soup for hot summer! Tried it in Lithuania on my vacation few years back and it was love at first sip. It is called Šaltibarščiai (sorry if I misspelled something I’m not Lithuanian:)). It’s fantastic!

Am I the only one that doesn’t find this looking appetizing at all? I’m sure it’s well made and all but that neon pink color is really off putting to me.
Makes me think of pepto bismol. But I’d still be up for giving it a try
