Your point is complete and utter bullshit.
It doesn’t take a genius to figure out that ANYONE hosting an email service, whether it’s a for-profit company or a collective, has to abide by laws and regulations.
Their marketing point is that your emails are stored with zero-access encryption, which is true. Only an IP address was disclosed under the 2021 subpoena that you are talking about, something that you can easily avoid by using a VPN or Tor. Proton Mail even offers an official onion service.
People are self hosting their emails for themselves, their collective, or their relatives. This a solution to avoid regulations, and keep a low profile. Their is others solutions (such as, not using email, or encrypt email by yourself). You could keep saying that everybody should using VPN (which don’t remove the issue, but move it elsewhere) or we could be less idealist and see what people are actually doing, and why.
